Description

A flavor-packed bowl featuring grilled chicken, street corn, and a creamy chili-lime sauce. Perfect for meal prep or quick summer dinners.


Ingredients

  • 2 boneless chicken breasts
  • 1 tbsp olive oil
  • 1 tsp chili powder
  • 1/2 tsp cumin
  • 1 garlic clove, minced
  • Juice of 1 lime
  • 2 cups cooked jasmine rice
  • 1 cup corn kernels (fresh or frozen)
  • 1/4 cup Greek yogurt or mayo
  • 1/2 tsp smoked paprika
  • 1 tbsp chopped cilantro
  • 1/4 cup cotija cheese
  • Salt to taste


Instructions

1. Marinate chicken in olive oil, spices, garlic, and lime for at least 30 mins.

2. Grill or pan-cook chicken 5–6 mins per side, then slice.

3. Char corn in a dry skillet until golden, then mix with lime and cotija.

4. Mix Greek yogurt or mayo with lime juice, paprika, and a pinch of salt to make sauce.

5. Assemble bowls with rice base, sliced chicken, corn, and drizzle with sauce.

6. Top with cilantro and extra cheese if desired.
