Description
This Mediterranean stir fry with ground beef is a quick, one-skillet meal bursting with juicy tomatoes, fresh greens, and bold herbs. Naturally keto, protein-packed, and ready in 25 minutes.
Ingredients
- 1 tbsp olive oil
- 1 red bell pepper, diced
- 1 pint cherry tomatoes, halved
- 4 garlic cloves, minced
- 8 oz fresh baby spinach
- 2 green onions, sliced (white and green parts separated)
- 1 lb lean ground beef (90%)
- 1/2 tsp dried oregano
- Salt and black pepper, to taste
- 2 tbsp crumbled feta (optional)
Instructions
1. Heat olive oil in a large skillet over medium-high heat. Add bell pepper and cherry tomatoes and sauté 4–5 minutes until tomatoes are blistered.
2. Stir in garlic and cook for 1 minute until fragrant.
3. Add spinach and the white part of green onions. Cook 2–3 minutes until spinach is wilted. Remove to a plate.
4. In the same skillet, add ground beef, oregano, salt, and pepper. Break up meat and cook until browned. Drain excess fat if needed.
5. Return cooked vegetables to the pan. Add green part of green onions. Stir to combine and heat through.
6. Top with crumbled feta before serving if desired.
Notes
Make it spicy by adding red pepper flakes.
For a dairy-free version, skip the feta or add a tahini drizzle.
Serve over cauliflower rice, in lettuce wraps, or topped with a fried egg for variety.
